2019 OLIVETI CORSINI OLIO EXTRA VERGINE, 750 ML
A mainstay in the Chez Panisse kitchens. Bottled in Chianti on the estate of Duccio Corsini, quintessentially spicy and green, this oil expresses itself rather boldly in the kitchen. Best used for dressing and finishing.
Made from a blend of Tuscan varietals including Frantoio, Leccino, Moraiolo, and Pendolino.
ANTICO CASTELLO OLIO DI OLIVA, 1 L
An excellent oil for cooking and dressing -- 30% extra-virgin
Bottled by a family-owned mill in southern Tuscany near the town of Arezzo, this is an unusually flavorful and smooth blended oil, a by-product of the fact that it contains 30% extra virgin oil, rather than the legally mandated minimum of 10% for an olive oil designated as an Olio di Oliva. It’s wonderfully useful for cooking and dressing. This oil is 100% Italian, styled in the Tuscan manner.
ACETO VIVO, 750 ML Unpasteurized red wine vinegar
Aceto Vivo is a lively, unpasteurized red wine vinegar. Many commercially produced vinegars fall short on flavor, balance and overall character. Much of this has to do with the fact that they are overwhelmingly produced from inferior wine, heated to disable any live cultures, and bottled without any exposure to the softening and flavor enhancing influences of oak. Aceto Vivo is produced at an artisanal acetaia in Tuscany on one of Chianti Classico’s most distinguished domaines.

We know of no other oil of comparable character that can express the distinctive flavor of the essential Tuscan Frantoio, Leccino and Pendolino olive varieties at anything close to a similarly reasonably price. We are grateful for the consistent quality that the Buonsapore presents as it was the first oil that we imported and it has remained a key element in the portfolio ever since.
